1 lb boneless beef sirloin steak cut into bite sized strips

salt and black pepper to season beef

2 T butter

3 C sliced fresh baby bella mushrooms

1 C chopped onions

1 t smoked paprika

2 cloves garlic minced

4 C lower sodium beef broth

1 T worcestershire sauce

1 T tomato paste

1 1/2 C dried egg noodles

1/2 C sour cream

2 T all purpose flour

parsley for garnish

Smoky Beef Stroganoff w/baby bella mushrooms


  1. Sprinkle meat with salt and pepper. In a 4 qt dutch oven melt butter over medium heat. Add mea, half at a time, and cook until browned. Remove meat, reserving drippings in pan.
  2. Add mushrooms, onion, garlic,  to reserved drippings. Cook over medium heat 5-7 minutes or until onion is tender, stirring occasionally. Add broth, Worcestershire sauce, and tomato paste. Bring to a boil. Stir in noodles. Boil gently for 5-7 minutes or just until noodles are tender.
  3. in a bowl combine sour cream and flour. Gradually stir about 1 cup of the hot broth into the sour cream mixture; return to remaining hot broth in pan. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Stir in meat; heat through. Top servings with parsley.
