1 lb lean groun beef

1 medium onion chopped

2 medium green peppers chopped

1 pkg (8.8oz) ready to serve brown rice

3 T packed brown sugar

1.2 t salt

1/2 t dried basil

1/2 dried oregano

2 cans (15oz each) tomato sauce

2 cans (14.5oz each) diced tomatoes undrained

1 carton (32oz) beef broth

Slow cooker stuffed pepper soup


  1. In a large skillet, cook and crumble beef with onion over medium heat until no longer pink, 5-7 minutes; transfer to a 6 qt slow cooker. Stir in the remaining ingredients.
  2. Cook covered, on low until flavors are blended, 5-6 hours.
