6 eggs

1/3 C Milk

4 slices firm textured bread (soudough, rye, whole grain)

3 T Butter

4 slices canadian style ham/bacon

2 T fig jam/ orange marmalade/ or jalapeno jelly

4 slices swiss cheese

4 fresh basil leaves

Salt and black pepper

  1. In a shallow bowl whisk together 2 of the eggs and the milk. Dip the bread slices into the mixture, coating both sides(let bread soak about 10 seconds per side). In a large skillet melt 2 T of the butter over medium heat. Add bread slices; cook 4-6 minutes or until golden, turning once. Remove from skillet and keep warm.
  2. In the same skillet melt the remaining butter over medium heat. Break remaining eggs into skillet; reduce heat to low. Cook 3-4 minutes or until egg whites are completely set and yolks start to thicken. For eggs over easy turn over gently and cook 30 more seconds.
  3. Spread bread slices with jam of your choice and layer with cheese, bacon/ham, and cooked eggs. Sprinkle with basil and season with salt and pepper to taste.
