1/3 C Milk
4 slices firm textured bread (soudough, rye, whole grain)
3 T Butter
4 slices canadian style ham/bacon
2 T fig jam/ orange marmalade/ or jalapeno jelly
4 slices swiss cheese
4 fresh basil leaves
Salt and black pepper
Open face breakfast monte cristos
- In a shallow bowl whisk together 2 of the eggs and the milk. Dip the bread slices into the mixture, coating both sides(let bread soak about 10 seconds per side). In a large skillet melt 2 T of the butter over medium heat. Add bread slices; cook 4-6 minutes or until golden, turning once. Remove from skillet and keep warm.
- In the same skillet melt the remaining butter over medium heat. Break remaining eggs into skillet; reduce heat to low. Cook 3-4 minutes or until egg whites are completely set and yolks start to thicken. For eggs over easy turn over gently and cook 30 more seconds.
- Spread bread slices with jam of your choice and layer with cheese, bacon/ham, and cooked eggs. Sprinkle with basil and season with salt and pepper to taste.
