2 Celery ribs chopped

1 Large onion chopped

1/2 C butter

1 pkg (14oz) seasoned stuffing croutons

2 T minced fresh parsley

1/4 t salt

1/8 t pepper

2 Large eggs beaten

2 cans (14.5oz each)chicken broth

4 C shredded cooked chicken

Chicken & Stuffing Casserole


  1. In a small skillet sauté celery and onion in butter until tender. In a bowl, combine the croutons, parsley, salt, pepper, and celery mixture. Combine eggs and broth; pour over bread mixture and toss to combine. Add chicken and toss gently.
  2. Transfer to a 13″x9″ greased baking dish. Cover and bake @350 fir 40-50 minutes or until a thermometer reads 160. Top if desired with gravy, parsley, and coarsely ground black pepper.
